The 30-year-old French native donned his chef whites at the Sofitel Legend Metropole Hanoi’s 80-seat contemporary haute brasserie on September 1. Together with his knives, classically trained Genique wields 10 years of cutting-edge experience with some of the world’s most renowned chefs; and a culinary career that traces a constellation of eight Michelin-starred restaurants in France and Europe.
Before coming to the Metropole, Genique worked as head chef of Paris’ Le Citrus Etoile under Gilles Epie, the youngest chef to ever be awarded a Michelin star. Genique spent two years as a sous chef at Le Jules Verne--Alain Ducasse’s Michelin-awarded gastronomic restaurant in the Eiffel Tower. Outside of France, Genique has done stints at the Michelin-starred Palais Coburg in Austria and Zum Adler in Switzerland.
Genique got an early start in the kitchen, coming from a family of restaurateurs. After training at the Ecole Hotelier D’Avignon and CFA Des Metiers De Bouches in Montpellier, the young chef promptly worked his way up from apprentice to chef de partie at the three-Michelin-starred restaurant Le Jardin des Sens.
No stranger to historical establishments, Genique spent a year as sous chef at Paris’ legendary Lasserre, awarded two Michelin stars. Notable clientele at Lasserre have included the likes of Audrey Hepburn, Marc Chagall and Salvador Dali; Le Beaulieu has cooked for figures such as Catherine Deneuve, Graham Greene and Charlie Chaplin and continues to be a favourite for the local well heeled discerning Hanoians and expatriates.
In operation since 1901, Le Beaulieu reigns as the Metropole’s flagship restaurant. The restaurant is well-known for its social Sunday brunches, authentic seasonal menus, and an impressive wine cellar stocked with more than 100 Grand Crus. In 2012, judges from TheDailyMeal.com singled out Le Beaulieu as one of the ‘101 Best Hotel Restaurants Around the World’.
